Cazal Viel - Vieilles Vignes
Our estate isn’t flat. It’s got hills and valleys, light and shade. And we’ve walked and tilled these lands for eight generations. This wine comes from on high, from one of the most beautiful parts of Saint-Chinian. Each plot is vinified separately with part of the ageing carried out in French oak for 12 months. That’s what gives it it’s character, the character of the place it comes from. The perfect blend of Syrah, Grenache and Mourvèdre, from the perfect place.
This is a wine that likes to be noticed. The aromas are intense, the spice is coming from the black pepper and cloves. But alongside this is it’s silky smoothness and a lightness, with a touch of wood, that catches you by surprise.
We would decant this for anything up to an hour first. It deserves it. Then try a prime rib or a carefully prepared duck. If you have someone to share it with that would appreciate it, even better.
