Cazal Viel - Clos Du Vent

How close can you get to the Gods? Well in our case it’s Clos Du Vent. The very highest point of our estate. It’s beautiful but harsh. It gets plenty of rain and then the winds whip in and dry up the rain. So the grapes have to try harder to survive. That means low yields of a very resilient grape that have worked very hard for the right to be in this bottle. Clarification is done at low temperature and fermentation is temperature controlled. It’s the least we could do.

It’s harsh upbringing leads to a delicate and lightness that is unexpected but very welcome. You will find some red fruits mixed in with the freshness. This cuvée is unbelievably refined and will make you proud in any company.

We’d rather not limit this one. It’s up to you because it will go with anything exquisite, and will make it a little bit better.
