Lieu-Dit - Bardou
Some plots, and the grapes that grow on them give you a little bit more. It changes each year and that’s the beauty of it. We take these special grapes from clay-limestone plots and harvest them at dawn. We ferment slowly, taking half the wine to rest in new French barrels for fourteen months. This softens the tannins and brings the perfect balance of lightness and aroma. It’s a complex process, but then it’s a complex wine.
When the best mix with the best the result is not surprising. This one is full-bodied as you’d expect but not overly dominant. It lets other flavours through, like red fruits and a little bit of spice. It attacks the senses, but not aggressively, more like a gentle massage of the taste buds.
It’s worth decanting for at least an hour before introducing it to food. Then some grilled white or red meats, with some thoughtful flavouring, will love being washed down with Bardou. The more intense fish varieties also enjoy it’s company.
