It gets plenty of rain and then the winds whip in and dry up the rain. So the grapes have to try harder to survive. That means low yields of a very resilient grape that have worked very hard for the right to be in this bottle. Clarification is done at low temperature and fermentation is temperature controlled. It’s the least we could do.
