Pas de Géant Languedoc

Our ‘Pas de Géant – Giant steps’ Languedoc celebrates the wild beauty of two iconic regions – Languedoc in the South of France, and Giants Causeway in Ireland. Both are natural, unspoilt dramatic landscapes. Ireland, my homeland, has been associated with the story of French wines over many centuries – as a Franco Irish couple we are writing a new chapter.

Varieties

Syrah 80%, Grenache 20%

Vinification & aging

Dawn harvesting with parcel selection, fermenting takes place in stainless steel tanks with a long maceration at high temperatures to give it generosity. 40% of the wine is aged in French barrels (1-2 years old) for 6 months to add more complexity. The rest is aged in stainless steel tanks to add bright berry notes.

Tasting notes

Typical southern French blend with dominant spicy Syrah and juicy, full Grenache. This wine offers a ripe nose of red fruits, with delicious mocha, herbs and spices. The palate is mellow with intense berry flavour and characteristic rosemary, thyme and floral notes. Rich berry fruit is associated with Laurent’s signature elegance and a smooth, velvety finish.

Sommelier recommendations

Serve with slow cooked pork belly or French confit of duck. Ideal temperature to serve, between 14° and 16°C.
